Quiet PCs?
I'm thinking about building a new Desktop machine, but it "lives" right next to the head of my bed, so I'd like it to be as quiet as possible.
Besides underclocking, any suggestions?
Cases, fans, power supplies, etc?

No need to underclock.
For a CPU heatsink&fan try the Zalman CNPS 7000, check newegg.com, it's quiet in normal speed mode and it's slient in low mode.
You can find a slient/quiet PSU easy enough newegg has a lots of them.
GFX card cooler, Zalman also makes some nice VGA coolers that are also quiet or you can get a passive cooler (basicly a big heatsink)
Case fans, just find some that are labled as quiet, slient or stealth.
You can also pack the case with noise damping pads to line the case. It's also said that if you use this stuff right not only will it keep the case quiet but also help in cooling by helping to plug the small holes which will help direct the air flow.
Rounded IDE cables is also a good idea to use, they mostly tie in with the use of the noise damping pads and better air flow.
Go to Google and do a search for 'quiet PC' and you'll get a good number of hits.
Do it right not only will it be quiet but it can also be a damn great gaming system too.

I'm actually more interested in a graphics/design machine, and just generally working right instead of of a high-end gaming rig.

Graphics design means you want horsepower... you can still make it quiet. Stealth case with watercooling, using one of the fanless radiator towers... it'll work nicely and be good and quiet.
