yeah man , winter is almost over here ... well , maybe i am being optimistic . it has been a weird spring transition . those last two storms dumped about two feet of snow .
i have been collecting/boiling down sap from the maples and box elders for about three weeks now . i'm not running a big time operation ; twenty trees .
i have about 3.5 gallons of finished products thus far ... with a gallon of "concentrated" sap ready for the final boil-down , it will yield about .5 gallon .
the ratio for the maples is running 25:1 and the box elders are at 40:1 .

i tapped ten birch trees yesterday (they start later than the others) and as soon as i talk to my neighbor , i might be tapping five more . the birch syrup runs about 60-80:1 .
birch bark extract and/or syrup is one of the ingredients in root beer or birch soda .

heh heh heh ... weeelll ....
i don't do this as a time killer , i dovetail it in between projects and chores .
it takes about two minutes to tap a tree , daily collection is about 20 minutes .
the boiling process sort of takes care of itself once you get it going . i walk away from it and do other stuff during that time (like right now) , checking on it and doing a little skimming . the final boil-down requires the most attention , you don't want to overshoot the mark or scorch it . there is a little more to it than i outlined though .

i don't do this for the money ... i make gifts of some of the products .
there's nothing quite like seeing the smile on an old boy's face when he chomps into a stack of pancakes smothered in butter with some homemade syrup drizzled over the top .
this stuff is higher compression than the store bought "real" stuff , it don't take near as much . you can thin it 50/50 and it works .

yeah man , i know what you mean .
las vegas , bullhead and phoenix were getting bad on air pollution . i really disliked it when i had to be in those areas .
i pissed in the lower colorado river then , now i piss in the headwaters of the mississippi river .
yessir , i can walk out my back door , walk 80 feet an whiz on "ol' man river" .

I'm glad to hear the weather may finally make a turn for the better. My short time in Wisconsin and Chicago reminded me how much I like South Carolina; that is, until the humidity gets high and the heat index hovers around 115! There's just nothing like sweating and the sweat not evaporating.
